2007 Cabernet Sauvignon
Alcohol: 13.9%
pH: 3.79
T.A.: 0.65g/100mL
This wine exhibits aromas of Cherry-Cola and blackberry, framed by subtle saddle leather, vanilla and floral, perfumey notes. The mouth balances briar-berry fruit and tobacco spice with firm, youthful tannins and bright, fresh acidity. The wine finishes with a full coating of the mouth, and a lingering graphite edged dried fruit finish. The wine is sturdy-built with a strong backbone of structure that will continue to benefit from cellar age.

- One of the top 100 Wines of 2010, Paul Gregutt
"A mix of small lot-fermeted Horse Heaven Hills Cabernet Sauvignon, some from Champoux, it's fine-tuned, varietal, loaded with cassis and plum, light toast and ground coffee. Elegant, proportionate and a fine expression of a great vintage."
